Ame-shin is a beautiful store that keeps the 8th century tradition of Amezaiku alive.  Amezaiku is a sculpture technique that uses heated candy at 90°C to make it malleable.  The sculpture must be finished within a few minutes, before it hardens again.  The the sculpture can be cut, pulled and bent but no part can be cut off, as waste is frowned upon.  A characteristic of this process is that they are formed and therefore always sold on a stick.

Even though the video is in Japanese you get the chance to see one of the sculptors at work and the lovely shop they are sold in.
